I buy Banana’s every week but my picky family won’t eat them if they have started to brown or have a lot of spots. So why not whip up some muffins with the over ripe ones? This recipe is super easy, protein packed and also freezer friendly. I use oat flour but you could just use old fashioned oats thrown in the blender. The whole recipe could be made in the blender if you want. Blend your dry ingredients first then add the wet ingedients. I like to make them in my stand mixer but either way works great. I also invested in a quality silicone muffin tin, no added oils and easy clean up. The muffins just pop right out. I really hope you enjoy these as much as we do!
