This is one of my favorite go-to summer time side dishes. Grill up some chicken and mix it in this salad and you would have a complete meal!

Ingredients

  • 1 head of broccoli

  • 1 head of cauliflower

  • 1 red onion

  • ¾ cup non fat, plain Greek yogurt

  • ¼ cup mayonaise

  • 2 tablespoons of apple cider vinegar

  • 1 teaspoon of Dijon mustard

  • ½ teaspoon of baking Stevia

  • ¼ teaspoon of salt

  • ¼ teaspoon of pepper

  • 5 slices of center cut bacon

  • 1/3 cup of dried cranberries

Directions

  • Cook and crumble the bacon.

  • Wash and trim the broccoli and cauliflower heads, removing the stalk and cutting or breaking them into bite size pieces. Finely chop the onion and add the broccoli, cauliflower, and onion to a mixing bowl.

  • Combine the dressing ingredients in a separate bowl : yogurt, mayo, apple cider vinegar, sweetener, salt and pepper. Combine until nice and creamy.

  • Toss everything together including the cranberries. Cover and pop in the refrigerator for a few hours or overnight. Eat with in 2-3 days.

    Fresh and crisp this Salsa pairs well with the Grilled Taco Chicken in the Lunch/Dinner section or as a snack with some chips.

    Ingredients

    • 3 Fresh Mangos, Peeled And Diced

    • 1 Medium Red Bell Pepper, Diced

    • 1/2 Cup Of A Red Onion, Finely Chopped

    • 1/4 Cup Of Cilantro, Finely Chopped. (Optional)

    • The Juice And Zest Of One Lime

    • 1 Medium Jalapeno, Chopped, Core And Seeds Removed

    • 1/4 Tsp. Salt Or To Taste

    Directions

    • Prepare all the ingredients, zest and juice the lime. Combine everything into a medium sized bowl.

    • Toss everything together and that's it. If you can let it rest in the refrigerator for an hour or so for the flavors to come together.
